Atlas Olive Oils' organic extra virgin olive oil is naturally rich in polyphenols, particularly hydroxytyrosol. This is due to the harsh environment of the Moroccan desert, which stresses the olive trees and triggers their survival instinct to produce a significant quantity of antioxidants. The resulting olive oil contains an extraordinary hydroxytyrosol value.
The company's integrated production process ensures full satisfaction. Atlas Olive Oils carefully curates every aspect of its organic olive oil production, from the selection of the right cultivars in an unspoiled environment to the use of mechanical processes and first cold pressing, to deliver a premium organic extra virgin olive oil.
The cultivars used include the bicentenary Picholine du Languedoc (80%), Picholine Marocaine (10%), Menara (2%), Haouzia (2%), Chemlali (2%), and Dahbia (4%), as well as the modern Arbequina (84%) and Arbossana (16%) varieties. The olives are grown in the Marrakech region, covering 245 hectares (605 acres) at an altitude of 390 meters above sea level, with a well-balanced soil composition.
Atlas Olive Oils' production process is meticulously controlled, from the pruning method and tree density to the extraction temperature and yield. The result is an exceptional organic extra virgin olive oil, with a maximum acidity of 0.2% or 0.4%, depending on the orchard.
