The balsamic undergoes cooking and caramelizing in a copper kettle over an open wood fire before being aged using the traditional Solera Method in old wood barrels that previously held older batches of aged balsamic vinegar. These barrels, made from different woods including oak, chestnut, acacia, cherry, mulberry, ash, and juniper, add character to the vinegar.

Viva Oliva's White Balsamic Vinegars are made by blending white grape must with 100% Italian barreled aged white wine vinegar, both made from Albana, Trebbiano, and Montuni grapes grown exclusively in the region of Modena, Italy. The traditionally cooked grape must is then lightly filtered and placed into new white oak barrels for aging.

Viva Oliva's 18 Year Traditional Balsamic is their most popular grade of aged balsamic condimento. Produced in the Traditional Style and aged using the Solera System for up to 18 years in chestnut, oak, mulberry, and ash barrels, this balsamic has 4% acidity and an astonishingly high natural density of 1.28+ without the use of thickeners or added sugar.
