Atlas Olive Oils produces organic extra virgin olive oil (EVOO) of superior quality, trusted by Michelin-starred chefs, representing the excellence of Morocco's culinary culture. The oil is naturally rich in polyphenols, particularly hydroxytyrosol, due to the harsh environment of the desert where the olive trees are grown.

The harsh conditions, including 127°F summer temperatures, rocky soil, and lack of water, cause the olive trees to experience a "panic" survival instinct, resulting in the production of a large quantity of antioxidant polyphenols. This leads to the olive oil containing an extraordinary amount of hydroxytyrosol.

Atlas Olive Oils has carefully approached all aspects of its organic olive oil production process by adopting sustainable procedures. The company's "Desert Miracle" organic EVOO is produced from the Dahbia (Moroccan) and Arbequina (Spanish) cultivars grown in the ElBorouj region, with an olive grove surface of 200 hectares (495 acres) at an altitude of 340 meters above sea level.

The soil in this region is a balance of 25% clay, 30% muddy/loamy, and 45% sandy, with a pH of 8.20. The olive trees are pruned into cups or hedges, with a density of 1,852 trees per hectare. The annual production of this EVOO is 330,000 liters, with a maximum acidity of 0.2% when bottled.

The olive oil is extracted using a two-phase continuous system, with the first cold pressing performed at a maximum temperature of 26°C. The yield ranges from 11.0% to 14%.

Desert Miracle EVOO has an attractive and gently complex aroma, with notes of almonds, basil, and sweet banana. The taste profile includes artichoke, hazelnut chocolate, and a sweet, delicate style, making it perfect for baking and desserts.
