Atlas Olive Oils' organic extra virgin olive oil is naturally rich in polyphenols, particularly hydroxytyrosol. Due to the harsh environment of the desert, with its high temperatures, rocky soil, and limited water availability, the olive trees are highly stressed, causing them to produce a substantial quantity of antioxidants to survive. This results in an extraordinary hydroxytyrosol value in the resulting olive oil.
The company's organic olive oil production process is characterized by sustainable procedures, ensuring that customers not only enjoy a premium organic extra virgin olive oil but also contribute to environmental protection. The oil is produced from a blend of old bicentenary and modern orchards, featuring various cultivars such as Picholine du Languedoc, Picholine Marocaine, Arbequina, and Arbossana.
The production area is located in the Marrakech region, with the olive groves covering 245 hectares (605 acres) at an altitude of 390 meters above sea level. The soil is well-balanced, with 30% clay, 35% muddy/loamy, and 35% sandy. The olive trees are pruned into cups or hedges, with varying tree densities.
The annual production ranges from 25,000 liters for the old bicentenary orchard to 450,000 liters for the modern orchard, with a maximum acidity of 0.4% and 0.2%, respectively. The olives are harvested from the end of September to the end of December and are cold-pressed at a maximum temperature of 26°C, using a 2-phase continuous system.
